Collaboration with Jason McAdam. A distinctly full-bodied and creamy stout with a touch of brine on the finish.

The “base” beer is a strong (medium strength by most standards, 16.6 plato) stout. We used chocolate wheat instead of the usual barley version along with a pinch of rolled rye.

In the end we decided to add roughly ten gallons of oyster “liquor” that Jason picked up fresh from the coast off a train. We didn’t want to brew an oyster stout without any oyster meat though so we also picked up eight dozen DeCourcy oysters from B.C. and cooked them during the kettle boil. After eating all the wort-soaked meat we cleaned and saved the shells to add later to the beer, post fermentation, like dryhopping.”

Visual: (cellared for 5 years). Hefty bottle. Pours jet black-brown with a small 1mm head, a thin layer of bubbly retention, barely visible scattered micro slow streams.

Nose: dark fruity malts (lvl-8)-pungency

Attack: creamy-crisp-thicker, sweet dark malt impression

Mid-palate: milky-creamy mocha, (lvl-5-sweetness), sweet roasted dark malt, oyster-fishy sour undertones, molasses-dark fruit, nutty

Finish: roasted coffee exhale, lingering bittersweet malty roast

Summary: A very bold and rich sweet stout with big dark fruit and roasted coffee notes, with the oysters seeming to add creamy depth a touch of salty-sour backdrop to an excellent base.

Visual: Pours opaque deep coral pink with a large supremely foamy long-lasting head, thick sticky lacing, clusters of active micro streams – Flawless appearance.

Nose: floral orange citrusy sweet malt with some tangy curd (lvl-7)-pungency

Attack: silky-fine creamy-crisp, airy alcoholic, sweet malt impression

Mid-palate: fruity juniper/crème de violet, (lvl-4-sweetness), soft tangy citrus curd, toffee malt

Finish: soft dry woody oak, dry gin edginess, stealth low bitter hops

Summary: A deeply interesting IPA that absorbs compound flavours from both the gin and wine that were aged in that same barrel (Wine -> Ransom Old Tom Gin -> Gigantic IPA). An IPA at heart with a prominent floral gin component as well as a woody nuance. The finish is slightly alcoholic aggressive. I’d love to try more gin BA beers.

Visual: Pours virtually clear golden orange with a small 1mm head, half lacing, loose clusters of active streams.

Nose: passionfruit-tangerine brightness with a touch of grassy hop, very clean and inviting. (lvl-7)-pungency

Attack: thicker-crisp, slightly creamy, citrus malt impression

Mid-palate: (lvl-4-sweetness), alcohol hit-low detection, passionfruit, mild pineapple, big tangerine citrusy, fruity-toffee barley malt

Finish: mild grapefruit bitter, tangerine exhale, off-dry bready grain, subtle bitter

Summary: Super stealth 8.1% ABV happening here, meaning that the complexity and balance matches its moderately high alcohol content. I wished for the tropical fruitness in the mids to last longer but instead the sweet barley kicks in a bit early.

Visual: Pours ultra dark brown with a creamy 2cm frothy head, sticky lacing, a thin layer of fine retention, singular fast as well as clustered steady micro streams.

Nose: initially light plasticky; sweet roasted barley malt (lvl-4)-pungency

Attack: crisp-creamy-thicker, sweet roasted malt impression

Mid-palate: liquid light roasted barley malt, (lvl-5-sweetness), background balanced stout sour, cascading creaminess, subtle alcohol detection

Finish: slight dark caramel, traces of salt, chocolate, smooth and clean bittersweet light roast

Summary: Extremely drinkable with subtle caramel and even subtler salt and bittersweetness to augment the main stout body. Wished for some vanilla to put it over the top. Still great.

Visual: Pours almost opaque dull orange-light copper brown without a significant head, thin ringed retention with a holey island, a bit of fine lacing, steady spread out singular streams.

Nose: clean resiny tangerine citrus hopped malt. (lvl-5)-pungency

Attack: very crisp bite, subtle incoming bitterness

Mid-palate: light tingly, crystal clean soft bright tangerine, (lvl-5-sweetness), toffee barley malt, dry-pine overtones

Finish: resiny soft bitter hops, long residual pine-grassy hopped bitterness, subtle citrus exhale

Summary: A pretty well-rounded IPA with alternating citrus-grassy pine reverberations from start to finish. A tad too dry and grassy for my liking; I prefer more citrusy notes.

Visual: Pours light orange with lots of suspended sediment, no head, supremely thin ringed retention, no activity.

Nose: light tangy sour apple juice mixed with some honey. (lvl-5)-pungency

Attack: dry, dull flat

Mid-palate: tangy-acidic, soft sour, soft apple fruit, (lvl-1-sweetness), grassy floralness non-bitter hops

Finish: dry light-med tart, white wine perfumey exhale, residual apple flavour

Summary: Not your typical juicy sweet cider, but instead a nuanced dry cider lacking in carbonated crispness. Okay with a meal, not terribly engaging or to my palate’s liking.

Visual: 2014 Vintage, Hefty bottle, twisty wire cap and composite cork with their name stamp. Bottle-conditioned. Pours clear cherry wood reddish brown without much of head, thin ring with a couple of islands, clusters of micro active streams.

Nose: pukey caramelized brown sugar, tangy red wine vinegar, sour cherry-apple (lvl-6)-pungency

Attack: crisp-big SOUR and big TARTNESS

Mid-palate: background pervasive wet woodiness, cherry & apple cider vinegar, ACIDIC-tangy, jammy (lvl-5-sweetness), puckery sour red cherry juice, caramelized barley malt

Finish: unsettling in the stomach, sour raspberry-pomegranate juice fruity exhale

Summary: The 2nd Cascade offering I’ve had the pleasure to try, the 1st being their Apricot [C+]. Yes, complex but again, so puckery sour this has to be minutely sipped. I’m liking the wet oaked woodiness and the dark fruity notes are nice, but I can’t fully endorse it as it just doesn’t hit the proper notes for me. Too vinegary acidic sour, not bright nor refreshing enough.
